The processing of beets has begun, and I decided to cook them in the Instant Pot which has been a huge time saver. I didn’t get to pickle any yet but it’s on my list and I still have plenty of beets to pick. I did get to eat one single green bean from our garden and the rest are still growing. We also picked the first cucumber.
